Did Someone Say Apple Cider Sufganiyot?

Who says sufganiyot (Hanukkah doughnuts) must be reserved strictly for Hanukkah? With apple picking in full swing and Thanksgiving just around the corner, sufganiyot can be the perfect fall dessert to serve at your next get together. Let’s take them for a spin now and incorporate a signature fall flavor: apple cider. Our culinary team at Lester Senior Living recommend trying this recipe on a lazy Sunday where you have more time to get it just right. 

Ingredients for Dough: 

  • Dry yeast (1 package)
  • Water warmed to 100 degrees (¾ cup)
  • All-purpose flour (2 1/2 cups)
  • Sugar (4 tablespoons)
  • Kosher salt (1/4 teaspoon)
  • Cinnamon (1 teaspoon)
  • Nutmeg (1/4 teaspoon)
  • Vanilla extract (1 teaspoon)
  • Egg yolks (2)
  • Unsalted butter, softened (¼ stick)

Ingredients for Filling:

  • Granny Smith apples peeled, cored and diced (2)
  • Butter (1 tablespoon)
  • Brown sugar (1/4 cup)
  • Lemon juice (1/2 teaspoon)
  • Apple cider (1/2 teaspoon)
  • All-purpose flour (1/2 tablespoon)
  • Cinnamon (1/2 teaspoon)

Vegetable oil for frying

Powdered sugar (½ cup) and Cinnamon (¼ cup) mixed together for dusting

Directions for Sufganiyot: 

  1. Mix together the yeast, half of the sugar (2 tablespoons) and the warm water in a large bowl. Set aside for about five minutes until the yeast is bubbling.
  2. In a separate bowl, mix together flour, the remaining sugar, salt, cinnamon, nutmeg, vanilla and egg yolks, then add it to the yeast mixture.
  3. Knead the dough until it forms a ball. Then add the softened butter and knead the dough until it absorbs all the butter. Cover your dough with a dish towel and let it rise in a warm place for an hour until it doubles in size.
  4. While you’re waiting for the dough to rise, get started on the filling. First, melt butter in a large saute pan over medium heat. Add the apples and saute until soft (approx. five minutes). Next, add in the sugar, lemon juice, apple cider, flour and cinnamon and stir to combine. Bring it to a boil, then lower heat and let the mixture cook for two minutes until thick. Once the filling is the right consistency, take it off the heat and let it cool.
  5. After the dough has doubled in size, roll it out to 1/8-inch thickness. Cut into 2-inch rounds with a cookie cutter or glass and put dough rounds on a cookie sheet. Cover with plastic wrap and let the dough relax for 10 minutes. Repeat this process with another cookie sheet if you have excess dough.
  6. Flatten out half of the doughnut circles slightly and place a teaspoon of the apple cider filling in the center of each circle. Place the remaining circles of dough over the filling, and press down the edges well to lock it in.
  7. Grab a Dutch oven with a deep bottom or a deep fryer and fill it up with a generous amount of vegetable oil. For reference, there should be enough oil to cover the whole surface of the sufganiyot. Heat the oil to 350 degrees.
  8. Fry sufganiyot a few at a time until golden brown (approx. 1-2 minutes on each side). Remove each one from the oil with a slotted spoon and let them drain on paper towels.
  9. Dip each sufganiyot into your cinnamon and powdered sugar mixture and serve to your company!
